HEALTHY VEGGIE BURGER

Vegetable burgers are an all time favorite at home.Homemade burger is better and much tastier than the ones from the fast food centers.It is a delicious combination of Indian aloo tikki and a soft bun.I make these when we want to have street food like burger with french fries.I make the veggie patties at home.Even though it takes time,homemade ones are healthier and always better.

Ingredients  


Measuring cup used ,1 cup = 250 ml

For patty


  • 300 grams potatoes or 3 large potatoes
  • 100 to 125 grams carrot or 1 medium carrot
  • 1/2 cup peas (matar) - fresh or frozen
  • 1 medium onion,finely chopped
  • 2-3 garlic,finely chopped
  • 3/4 inch ginger,finely chopped
  • 1 to 2 green chillies (chopped)
  • 1/2 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp garam masala powder
  • 5 to 6 tbsp bread crumbs or add as required
  • Salt as required
  • 2 to 3 tbsp oil for shallow frying

For toppings

  • 1 small to medium tomato,thinly sliced
  • 1 small to medium cucumber ,thinly sliced
  • 1 small to medium onion,thinly sliced
  • Butter or oil as required for toasting the buns 
  • 4 sesame burger buns
  • Oregano as required
  • 3-4 tbsp veg eggless mayonnaise
  • 1/2 tsp freshly crushed black pepper

Instructions


Preparing bread crumbs:

  1. Break 6-7 slices of breads and add in a mixer or dry grinder.Grind to a fine consistency.
  2. Take the bread crumbs in a plate or bowl .Keep aside.

Preparing vegetable patty mixture:

  1. Boil potatoes,carrot and peas in a pressure cooker till they are completely cooked.Once cooked drain well the veggies.
  2. Finely chop potatoes and carrots when warm.
  3. Mash the potatoes with a potato masher,when mashed potato cools down completely,add chopped carrots and also add the boiled peas.
  4. Mix everything and keep aside.
  5. Heat 1 tsp oil in a pan,add the chopped ginger-garlic-green chilli.Saute for some seconds till the raw aroma of ginger and garlic goes away.
  6. Add the chopped onions,stir and saute till the onions turns translucent.
  7. Add coriander powder,cumin powder,garam masala powder and red chilli powder.
  8. Stir and mix the spices with the rest of the mixture.
  9. Switch off the flame.Stir very well and add this sauted onion mixture to the mashed veggies.
  10. Add salt and bread crumbs.
  11. Mix it very well and keep aside.
  12. Make veg patties as same as the size of the buns.
  13. If the mixture looks soft or crumbles ,then do add some more breadcrumbs and mix again very well.
  14. Cover the patties and keep aside.
  15. Heat a non-stick tawa,Place the patties one by one and shallow fry them on both sides till they are crispy and golden in color.

Assembling:

  1. Slice the burger buns in equal halves.
  2. Spread some butter on the slices.
  3. Heat a small pan and toast the butter side.
  4. The buttered side should become lightly crisp and golden .Toast all the buns this way.
  5. Now,spread some mayonnaise on the crisp side.\
  6. Sprinkle black pepper powder and oregano as per required.
  7. Place the vegetable patty.
  8. Top up with sliced veggies like onion slices,tomato slices or cucumber slices.
  9. Place a cheese slice on the second halve of the bun.
  10. Place the bun on top of each other.
  11. Vegetable burger is ready,make all the burgers this way.
Serve these delicious homemade vegetable burger immediately with tomato ketchup.
