This recipe of vegetable pasta in white sauce get made at home often and is liked by everyone. As an accompaniment to the pasta, i toast some bread slices. You can use your choice of veggies in the pasta. We are fond of peas, baby corns, carrots, red/yellow bell peppers, corns and onions.

Ingredients
Measuring cup used, 1 cup=250 ml
for pasta
- 3/4 cup penne pasta
- 1/2 tsp salt
- 4-5 cups water
for veggies
- 1/2 cup green peas -fresh or frozen
- 1 small to medium carrot, finely chopped
- 1 small to medium capsicum-any color(red, yellow, green)
- 4 to 5 baby corns
- 1 medium onion, finely chopped
- 1/2 tsp oil
- Salt to taste
for sauce
- 11/2 tbsp butter
- 1 tsp finely chopped garlic
- 1 tbsp maida
- 1 cup milk
- 1/4 tsp dried oregano
- 1/4 tsp chilli flakes
- A pinch of black pepper powder
- salt to taste
Instructions
- To begin making white sauce pasta recipe, start by cooking pasta. Bring plenty of water in a pot to boil. Add pasta along with a drop of oil and cook till done. Set aside the boiled pasta.
- In a pan, add butter. Add chopped veggies- boiled peas, carrot, capsicum, baby corns and onions and saute for few minutes. Remove to a plate.
- In the same pan, add butter and melt it.
- Add maida and whisk very well.
- Add boiled and cooked milk. Keep whisking in low flame.
- The mixture will start to thicken. At this stage add chilli flakes, pepper powder, salt and oregano.
- Keep whisking till the sauce further thickens and turns smooth.
- Add the sauted veggies and mix very well.
- Add boiled pasta and mix well.
- Serve white sauce pasta hot.
Note:
- Make sure that there are no lumps in white sauce.
- You can add 2 tbsp grated cheese while preparing white sauce or you can serve the topped with grated cheese.
- You can add any dried herb or even mixed pasta spice instead of oregano.
