CRISPY BABY CORN

Today I am sharing an easy starter recipe from many popular indo chinese recipes.No wonder baby corn is loved by most for its crunchy texture and slight sweet and nutty taste. It lends itself very well in many indo chinese recipes.This crispy baby corn recipe is also a very popular chinese recipe with very few ingredients yet very tasty and flavorful. All you need to make this chilli baby corn recipe are few tender baby corns and basic pantry staples.

Best Crispy baby corn

It makes for an excellent starter or side dish for home parties or regular meals.

Ingredients

  • 12-15 baby corns
  • 1/2 inch ginger finely chopped
  • 2-3 green chillies (slit)
  • 3-4 garlic finely chopped
  • 1/2 cup finely chopped onion or spring onions
  • 1 tsp finely chopped coriander leaves
  • 2 tbsp tomato ketchup
  • 1 tbsp rice flour
  • 2 tbsp all purpose flour(maida)
  • Salt and pepper as required
  • Oil for frying baby corn
  • 1 tbsp oil for the sauce

Instructions

  1. Make a smooth paste with rice flour,all purpose flour (maida) ,salt ,pepper and water.
  2. Rinse and dry the baby corn with kitchen towels.
  3. Chop the baby corn if they are larger in size or keep them whole if they are smaller.
  4. Heat oil in a heavy bottomed wok.
  5. Dip each baby corn piece in the batter and coat it well with the batter.
  6. Fry the baby corn till the edges and sides are golden brown.
  7. Take them out and drain the baby corn on kitchen napkins.

Preparing the sauce

  1. In another pan or kadai heat about 1 tbsp oil.
  2. Add chopped onions or spring onions, ginger, garlic and slit green chillies.
  3. Stir fry on a medium flame till the onions have become translucent .(If adding capsicum ,add now stir fry till the capsicum have partly cooked but still retain their crunch).
  4. Add the ketchup and stir well.
  5. Now,sprinkle black pepper powder, salt and stir.
  6. Add the fried baby corns with chopped coriander to this mixture. Stir well.
  7. Serve the baby corn garnished with some spring onions or chopped coriander.

Notes

  1. You can also use soy sauce instead of tomato ketchup. Just add 1 tsp sugar for a sweet taste.
  2. You can shallow fry the baby corns too.
  3. You can use corn flour instead of rice flour.
